They were my favorite sweet when I was little. They don't taste (or look) like other sugar cookies, but since that's she called them, that's what I'm calling my attempt at veganizing them Grandma's Sugar Cookies Makes 24 cookies 5 tablespoons + 1 teaspoon flax seeds 1 cup water 6 cups of whole wheat pastry flour 1 tablespoon baking powder 8 oz. Tofutti " cream cheese " A few drops of vanilla 2 cups sugar cinnamon (or cinnamon and sugar) to sprinkle on top Preheat oven to 350 F. Line two cookie sheets with parchment paper. Grind flax seeds, and blend them with water until gloppy. Set aside. Thoroughly mix the flour and baking powder. Add Tofutti and mix briefly until dough is more or less uniformly crumbly. Make a well and add flax seed/water mixture, vanilla, and sugar. Mix just until everything is evenly distributed. (Don't overmix.) Make dough into balls and flatten to about 2 inches in diameter and 3/8 to ½ inch high. (Leave about an inch between cookies.) Sprinkle with cinnamon. Bake for 25 minutes (until the edges brown).
