I cooked it from scratch and it took forever! The very next day I saw it in the store already cooked! I had to laugh! It's great in patties, fried in a little olive oil. Maybe even add some beans? I need to get organized more on cooking, as in making ahead and freezing, plus I need to start making my own bread. Guest guest Posted January 22, 2009 Report Share Posted January 22, 2009 I love making polenta from scratch! I use coarse grits for a firmer texture. I put it into a lightly greased pan (9x13) and let chill until needed. Cut into cubes, slices, whatever you choose. Then brown in skillet in small amount of olive oil or bake on a cookie sheet. Meg likes it plain with ketchup. Sometimes I'll mix in some minced garlic before chilling it. You can also add cooked onions, peppers, etc at that time too.
