Guest guest Posted May 20, 2009 Report Share Posted May 20, 2009 Penne with Tofu Basil Pesto 1 cup fresh basil 1 cup soft tofu, 6 ozs. 1/4 cup parmesan cheese 2 tablespoons olive oil 2 tablespoons fresh lemon juice pepper and salt to taste 2 large cloves garlic, minced 1 teaspoon olive oil 2 1/2 cups mushrooms, sliced 1/4 cup onion, minced 4 cups hot cooked pasta Combine the first 7 ingredients in food processor or blender and blend until smooth. Keep this mixture warm in a saucepan. Heat 1 teaspoon olive oil and sauté the mushrooms and onions. Toss everything in a large bowl and serve! Serves 4. _______________ One at a time or all at once?
