Guest guest Posted June 29, 2009 Report Share Posted June 29, 2009 * Exported from MasterCook * Baked Quorn with Mushrooms, Red onion and Peppers Recipe By : Serving Size : 4 Preparation Time :0:10 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large red onions -- cut into wedges 2 orange peppers -- halves, seeded and thickly sliced 1 tablespoon olive oil 4 quorn fillets 500 grams jar Dolmio extra mushroom sauce for bolognese To serve: crusty bread green salad Preheat the oven to 200C/Gas 7. Toss the red onion, peppers and olive oil together and tip into a large baking dish. Roast for 15 minutes until softened and golden brown. Lower the oven to 200C/Gas 6. Nestle the quorn in with the roasted vegetables and pour over the sauce. Cover with foil and bake for 15 minutes. Remove the foil and cook for a further 5 minutes until the vegetables are tender. Serve with salad and crusty bread. Description: " A stylish and nutritious dish that's nice and easy to make " - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 60 Calories; 4g Fat (50.2% calories from fat); 1g Protein; 7g Carbohydrate; 1g Dietary Fiber; 0mg Cholesterol; 2mg Sodium. Exchanges: 1 Vegetable; 1/2 Fat. NOTES : The original recipe called for ch*cken breasts, but obviously I have substituted with quorn. Also, I only had a 300g jar of Dolmio mushroom sauce, so I threw in a 400g can of cherry tomatoes. I also added some sliced mushrooms, and a can of new potatoes, sliced, to make it a " meal in a pot " so I didn't have to do an accompaniment. I also roasted the vegetables for half an hour, not 15 minutes, but I am catering for an 83 year old who refuses to get new teeth, so chewy veg are not an option!!! Nutr. So funny about your 83-year-old who won't get new teeth! (My 87-year-old grandmother complains that her molars are worn smooth and makes eating popcorn impossible -- fortunately, she can still eat cookies!) Audrey S. I can also sympathise with the whole teeth thing - my 86 year old Dad won't wear any teeth at all, so all veg are cooked to within an inch of their ability to remain recognisable.
