Guest guest Posted February 2, 2009 Report Share Posted February 2, 2009 If you make a kitchen disaster don't let it discourage you, ever. Go right back intpo the kitchen and try another recipe. When baking be very careful to level off measuring cups and measuring spoons with the flat side of a table knife. If the recipe calls for an egg, use a large egg, etc. You can always write me off list if you need help. Well, I bought Vegan Cupcakes Take Over The World, and to me, those recipes are not easy. BUT..... I succeeded! Almost. The cupcake I made was orange in flavor with an orange filling (which is what didn't form to the pudding-like consistency, but is still delish!) with a chocolate ganache topping. I am really excited to hit the gym later on so that I may indulge in 2 more cupcakes while watching t.v. this evening. We had been given 2 dozen home-grown oranges by former neighbors and the juice and zest of a few went to good use. Plus, my hubby took some of the cupcakes back to them to try. I also pulled all the ingredients out onto the counter and read the recipe about 20 times to familiarize myself with it. I think I was in the zone, as I had just made 3 dinners simultaneously for the week. My mind was on the food, and I remember thinking how quite and peaceful it was in the kitchen .
