Well, I bought Vegan Cupcakes Take Over The World, and to me, those recipes are not easy. BUT..... I succeeded! Almost. The cupcake I made was orange in flavor with an orange filling (which is what didn't form to the pudding-like consistency, but is still delish!) with a chocolate ganache topping. I am really excited to hit the gym later on so that I may indulge in 2 more cupcakes while watching t.v. this evening. We had been given 2 dozen home-grown oranges by former neighbors and the juice and zest of a few went to good use. Plus, my hubby took some of the cupcakes back to them to try.
