Guest guest Posted February 2, 2009 Report Share Posted February 2, 2009 * Exported from MasterCook * Halloumi Cheese With Tomato And Caper Sauce Recipe By :Rose Elliot Serving Size : 0 Preparation Time :0:00 Categories : Quick Cheese & Eggs Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons olive oil 1 onion -- chopped 1 clove garlic -- crushed 500 grams tomatoes -- (1 lb) skinned and chopped 1 tablespoon capers 250 grams halloumi cheese -- (8oz) cut into slices about 8mm (1/8 inch) thick salt and freshly ground black pepper 1 sprig flat leaf parsley -- to garnish Heat 1 tbsp of the olive oil in a saucepan and add the onion and garlic; cover and cook gently fro 5 minutes, then add the tomatoes and cook, uncovered, for a further 10 minutes until the tomatoes are soft and any wateriness has gone. Remove from the heat, stir in the capers and some salt and pepper to taste, and leave on one side. Heat the remaining olive oil in a frying pan and put in some slices of halloumi cheese (you will probably have to cook them in 2 batches). Fry them on both sides until they are lightly browned; this only takes a few seconds. Drain the cheese on kitchen paper and serve accompanied by the sauce and garnished with flat leaf parsley.
