Hey guys...

I'm usually a lurker. I feel a little funny talking as I'm not

actually a vegetarian. I'm just one of those weird people whom neither

vegetarians nor omnivores understand. LOL I prefer a vegetarian main course

with a small meat (actually usually fish, which probably makes me a

pescatarian, no? Well, anyway...) side dish. However, I am grateful for all

the

wonderful vegetarian recipes you send my way so, when I find something

really good that I think you'll like, I try to return the favor.

Now, I call this yumminess and yuckiness because the first is my

version; the second is my 5-year-old's adaptation. So... LOL... try to keep

that in perspective. Here goes.

 

Yumminess... Sort of Greek Salad Wrap

Ingredients:

Lettuce... your favorite kind (I like arugala or dandelion greens, but

whatever floats your boat will work)

cucumbers, sliced or cut into strips (I prefer Kirbys)

peppers (sweet, assorted colors), sliced into 2 " slices

grape tomatoes, sliced in half

baby carrots, sliced the long way, then cut into half pennies

chick peas/garbanzo beans

avocados, sliced

mozzarella cheese, grated (vegans replace with what you use for cheese)

feta cheese (ditto above)

whole wheat wrap

creamy Caesar dressing

 

Procedure:

Just stick as much of the above as you can into a wrap, roll it up, and

enjoy.

 

Yuckiness... Kid-Pleaser Variation

Just substitute a sweet red dressing such as Marie's Raspberry Vinaigrette

or Ken's Raspberry Walnut dressing for the creamy Caesar. It's so sweet,

it will make your fillings ache, but my little one loves it... and if it

makes him eat vegetables, so be it.

You are welcome here! I can't wait to try your sandwiches. Carl will want the

sweet version. I'm with you, if there is any way to get a kid to happily eat
