Lois,

This is my recipe for Tamales.

Vegetarian-Vegan

T & T

 

1 doz.Cornhusks soaked in warm water for several hours or overnight.

Pat with a towel to remove excess water.

 

Tamale Dough

3 cups Masa Harina Tortilla flour

1/2 cup Vegetable Lard

1/4 teaspoon salt

1 cup vegetable stock

 

In a large mixing bowl stir together flour and vegetable stock. Cover and

let stand 20 min. In a seperate mixing bowl beat together Vegetable

shortening and salt until fluffy. Add flour mixture until well combined.

Spoon apx 1/2 cup dough onto each tamale wrapper.

 

Spoon apx.3 tablespoons of filling down the center of the dough.

 

Filling

3 cups cooked rice

1 cup chopped mushrooms-sauteed

1/2 cup chopped walnuts or pecans

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

salt and pepper to taste

 

Roll the filled cornhusk wrappers,jelly roll style and tie ends with strips

of corn husks

Steam Tamales on medium heat for 45-50 minutes.. Unwrap tamales and serve

immediately .

 

Top with your favorite salsa
