Here is a list of some of the wonderful dishes brought to the grad party- I am still thawing out left overs and enjoying it! We had your standard Mac-n-cheese, mac-n-cheese with artichoke hearts and white wine sauce, some with california style vegetables, one with sundried tomatoes, one had some roasted red peppers and garlic and there was even fried mac-n-cheese squares. Some made beautiful tossed salads, one person made a hot mustard dressing with honey, dijon mustard, wine and some spices (She won't tell me which ones) There were some fantastic pasta salads, my Mom made one with spinach,red peppers, feta, olives, red onions, feta and greek dressing with whole wheat penne. Burritos were in abundant supply, black bean, rice and cheese, quorn and rice, one of the best had yellow corn, cilantro, black beans, rice, and tomatoes wrapped in a multi-grain tortilla.Lots of guacamoles, salsas and pico de gallos. Rice Pilafs were also a favorite choice, there was a pilaf made with basmati,red and black pearl rices, some lovely indian inspired pilafs, and an African curried rice pilaf. There were lots of homemade pizzas, one in particular had a whole wheat crust, a seasoned cream cheese base and chopped raw veggies. It didn't last long but it is still being talked about. White pizzas with roasted garlic and olive oil, our neighbor made goat cheese pizzas with milk from her goats and wheat that she grew herself, there were even fruit pizzas which were a new thing to me but delicious. The grilled veggie wraps were fantastic, I had never had grilled broccoli or cauliflower before, but they are excellent and added wonderful texture to the wraps. There were some raw veggie wraps and tons of pestos. Last, but certainly not least- the one vegetarian dish my Mother-in-law makes (she adds meat or bacon bits to all her vegetables) Grandma Kathy's Famous Tomato and Cucumber Salad Vinaigrette: 1 teaspoon brown sugar 1/4 cup balsamic vinegar 2 teaspoons Dijon mustard 1/4 teaspoon salt 1/4 teaspoon pepper 1 cup olive oil 1/2 teaspoon itallian seasoning 3 large cucumbers cut 2-3 large tomatoes cut 1 red onion sliced thin Combine vegetables with vinaigrette, and toss. Refrigerate for at least an hour and serve. (I prefer to serve it with a nice crusty bread to soak up all of the wonderful dressing) Quote Link to comment Share on other sites More sharing options...
