Guest guest Posted June 29, 2009 Report Share Posted June 29, 2009 I'm not a huge fan of turnips, but this was so very, very good that I have to share the recipe It's from Indian Vegetarian Cooking by Michael Panya. I veganized it by steam sauteeing the ginger and onion in water, and the tomatoes give it a very nice, fresh sweetness, so I didn't add any sugar. Wonderful!! Shaljam Bhurta (Mashed Turnip) 1 lb turnips 4 tbs ghee 1/2 tsp. grated, fresh ginger root 1 med onion, finely chopped 2 med tomatoes, quartered 2 green chili peppers, chopped 1/2 tsp. ground cumin 1 tsp. garam masala sea salt, to taste pinch of raw sugar 1 tbl chopped cilantro Boil, peel and mash the turnips. Heat ghee in a kadhai or a frying pan, and saute the ginger and onion until golden. Add tomatoes, along with chillies, cumin, and garam masala. Mix in turnips, add salt, and blend.
