Here's the link to the spinach folder: %2ARecipes/Greens/Spinach/ I add it to lots of things - one of my favorite recipes is " Spinach Bake " 2 boxes frozen chopped spinach squeezed dry/sometimes I add some chopped broccoli (you can certainly use fresh, but the frozen is easy) onions/mushrooms sauted in olive oil (leeks are good) amount varies-depends on what I have 1 or 2 eggs beaten 1 cup shredded cheese (I like a combo of mozzarella & cheddar) 1/4 cup parmesan cheese garlic powder dill weed 1 cup diced bread cubes (I often leave this out) 1 cup milk (sometimes less - haven't tried unsweetened soy etc milk but it would probably work) Bake at 375 for 25 to 30 mins Jann " Tiffany Wheatley " <tiffany22mt wrote: > So, we got a huge amount of spinach from the co-op in our box this week and I need ideas!
