Guest guest Posted January 15, 2009 Report Share Posted January 15, 2009 hi Carol i cldnt stop myself my reading the posts so i logged in. vegetarian food is sometimes is low in iron if u dont eat eggs. but pure vegetarians can get enough iron from drumstick leaves which is also a very good source of calcium. usually the leaves are chopped and made into a dry curry and given to lactating mothers to increase the milk production. this tree grows in india,thailand,phillipines,srilanka and most of south asia. its the cheapest form of iron available. i doubt whether it grows in europe or usa.you can check with your friends if anyone knows about it growing some where near your place. i am growing this tree in dubai with temperature reaching 50 degrees in summer. also spinach is a good source of iron but the amount you should eat should have to be more to get the daily recommended dose of iron. so if your are not diabetic,over weight you can have 4-5 dates every day to get iron. also in indian cooking atleast in south india where i come from we use diluted tamarind water for our curries.which invariably a good source of iron is added in our daily food intake. the indian sugar or jaggery or palm sugar is also a good source of iron.if the taste is liked it can be used in powdered form instead of sugar. another healthy snack to boost all your vitamin,iron needs is to make a snack out of sprouted pulses and mix it with powdered jaggery and coconut scrappings.a pinch of cardomom powder will make it smell and taste great. for a spicier version add chopped onions,tomatoes,boiled cubed potatoes,cilanto chopped with salt,chilli powder a pinch and lime juice. refrigerate for 1-2 hrs to let the flavours combine. bye for now vidhya BYE VIDHYA --- On Thu, 1/15/09, Carol Redding <dilledmutton wrote: Carol Redding <dilledmutton you are what you eat Thursday, January 15, 2009, 9:00 PM Ok, help me out here. I grew up hearing you are what you eat and the way my mother cooked, believe me I was. I had years of problems besides not eating right. An Indian friend of mine told me if I tried this I would feel better. My granddaughter said that while she was doing it she felt better. Some people say you get your iron from meat, if that was true, I shouldn't be enemic. I would love to know all the vegtables that would build up iron. I was raised as my parents were and now I'm looking to improve that. Vegtables were the last thing I looked for except when I raised a garden. I like dates and didn't know they were good for iron. I'm learning! I am diabetic, but if I'm careful should be ok. Not doing anything right now anyhow. I'm hoping that the more vegetables I eat the better my sugar levels will be. Can't hurt anything. Thanks again.
