Barley Lentil Split Pea soup--Pete

I have tried a wide variety of Bob's Mill products and have never

been disappointed. I want to head down to Portland and take a tour of

the plant and visitor's center in the spring. They have a cafe where

you can eat yummy veg fare at a very good price. I have tried the

Vegi soup mix and used tofu as well. I add a rosemary garlic

seasoning to this and it tastes divine!

Who has tried Bob's Red Mill VEGI soup mix? It is wonderful! And I

can't remember who recommended their nutritional yeast (i think

judy?), but thanks, it does have much better flavor than what I've

been getting.

The soup mix is what looks like equal parts of split peas, lentils

and barley and little pieces of pasta made from wheat flour, spinach,

tomato, celery, onions, beets and garlic.

My soup:

1 cup soup mix

3 cups vegetable broth

salt and pepper (i used 1/2 t each)

1 t whole coriander

(i like it whole, because it doesn't really overpower the soup but

you still get that surprise bite of flavor every now and then)

1 half block (about 1 cup) cubed extra firm tofu

 

i ate mine with most of the liquid drained, with some diced apple and

a little lemon juice, it was yummy

I've heard about the plant and visitor's center - I'd love to see it as well.

I'll be trying more of their products
