Guest guest Posted April 16, 2009 Report Share Posted April 16, 2009 I just want to say thank you all so much for helping me with the iron issue, and for all the great ideas on cheap eats. I haven't completely converted over, but we already eat so much more vegetarian and the kids haven't even noticed! lol I have begun trying new things and have been encouraged to try foods I haven't before like the split pea soup. (Which is a new favorite of mine, kids still don't like soup much.) I had already begun somewhat before joining the group by using only vegetable broth where chicken broth is called for - like in my gram's greens recipes. As soon as I can hit the grocery store I had planned on getting some tofu to try the kung pou tofu recipes I had seen listed that look soooo good! I also want to try the lentil loaf here soon. I have the ingredients for that already on hand. I love looking through my old fashioned cookbooks (many are over 100 years old) and seeing how much was vegetables, so I have some oldies, some I have made already using vegetable broth or frying in evoo instead of lard, that kind of things. Just baby steps I guess, but it's so new and fun. You all have opened up a whole new world of foods for me from quorn and tvp (?) to actually knowing what to do with the tofu instead of watching it go bad in my fridge.
