Guest guest Posted January 19, 2009 Report Share Posted January 19, 2009 Pea And Bean Salad 1/3 pound snow peas, trimmed, strings removed 1/3 pound green beans, cut 2 " pieces 2 tablespoons olive oil 1 tablespoon white wine vinegar 1/2 teaspoon salt 1/4 packet sugar substitute 1/2 teaspoon dried tarragon Cook green beans in a large pot of lightly salted water 3 to 4 minutes, until crisp-tender. Add snow peas during the last minute of cooking time. Drain and return to pot. Mix in oil, vinegar, salt, sugar substitute and tarragon. Toss to coat vegetables evenly. Makes 4 servings.
