Guest guest Posted December 26, 2008 Report Share Posted December 26, 2008 When it's done baking you turn the oven off, crack open the oven door and leave it in there until the oven has cooled. Then remove the cheesecake careful, place plate on a wire rack and when it's cooled completely place in the fridge. This has always worked for me no matter what recipe I use.
