We had this tonight with dinner also. Very delicious and a very pretty

green creamy soup.

Cream of Curried Pea Soup

 

2 c. frozen green peas

2 med. onions diced

2 carrots, diced

2 stalks celery, sliced

2 med. potatoes, cut into quarters

2 garlic cloves

2 t. curry powder

4 c. vegetarian " chick*n " broth - made by mixing together 4 T. McKay's

Chicken style(all vegetarian) seasoning and 4 c. water

1 c. buttermilk

 

Heat 2 c. of the vegetarian chick*en broth in a large pot and bring to a

boil. Add veggies and seasonings and cover. Reduce the heat & simmer

until veggie are tender - about 15 minutes. Transfer to a food process or

Vita Mix(I used this) and puree. Put back in the pot and add the remaining

2 c. of broth and 1 c. of buttermilk and stir well. Add salt to taste and

serve.
