I have a question I was hoping some of you may have experience with. Any suggestions are welcome My husband just spent 3 days in the hospital and came out with a pacemaker. He needs to eliminate meat from his diet (he doesn't eat fish or chicken) so I am trying to figure out how to entice him to a vegetarian diet. He is a very picky eater, grew up on meat and potatoes, if you know what I mean. He is a little more open minded after his hospital experience but I don't want to push too hard so I was hoping to get some suggestions on how to ease him into a meatless lifestyle. Here's my challenge... he rejects anything that is green except for salads and beans. He isn't much on fruit except for berries. I know he is getting really tired of PB & J sandwiches, nuts and yogurts for lunch. Oh, he needs to eliminate saturated fats and eat low sodium. Also thought I would mention I would love some kid friendly recipes DC are 9 & 11, they both eat just about anything. DS(11) is vegetarian and I eat mostly vegetarian as well.
