Guest guest Posted August 23, 2009 Report Share Posted August 23, 2009 That's a really good idea! I hadn't thought of using muffin tins. When I do use stock for a recipe I use 1 cup at a time. My freezer stays pretty full but I have it set up so I can put a flat cookie sheet or muffin tin in the freezer for flash freezing things. When I get large quantities of tomatoes I wash, core and stick them in either muffin tins or cookie sheets so I can pop them in hot water and skin them easier for processing.
