I taste as I go and add more of certain things as necessary to get the flavor I like. Mushroom Edamame Brown Rice " Stir Fry " 1/2 lb. button mushrooms, quartered (or larger mushrooms, thickly sliced) 1/2 red onion, chopped 3 T. canola or olive oil 3-4 cloves garlic, pressed or minced 1 1/2 c. cooked brown rice with 1 T. of olive oil mixed in after cooking 2-3 T. rice vinegar 2-3 T. tamari 1 c. shelled, cooked edamame 1 T. brown sugar (or sweetener of choice) Sea or kosher salt and freshly ground pepper to taste Saute mushrooms and onion in oil on med.-med. high heat until golden. Turn heat down to med.-low and stir in the garlic. Cook for 30-60 seconds until it becomes fragrant. Stir in rice, edamame, brown sugar, tamari, vinegar, and salt and pepper to taste.
