Guest guest
Out of pure curiosity I am always intrigued to know why some think being vegan or even vegetarian means more cooking? Because I found that I cooked less when cooking for a family, and not just myself. Since I could cook up ahead of time, beans, rice, and various other vegetables, which I froze or canned for using in future meals. Like making a vegetarian batch of various beans which I could use for making chili cheese fries, tacos, soups, spaghetti sauce, salads. And I keep a variety of health pastas, rice's, tortillas (corn and flour) on hand. And with a bounty of vegetables I can make so many types of salads which we eat daily. Breakfasts are fruit and yogurt with some whole grain topping. ~Beth~ Rose Lieberman <lapis Hi folks. My name is Rose, I'm 61, I live in rural upstate New York. Fred and I vascillate between vegan and vegetarian. I need to be vegan because of my health. But I am SO tired of cooking. I enjoy it, but I'm feeling chained to the stove lately. Guest guest
First of all, Beth, thanks for responding. In any event, the rice, beans and vegetables are no problem. I guess I should have been more specific in my request for information. I'm talking about ENTREES, mainly, although I should be doing more quick stirfries than I currently do, as well as cooking ahead more. No excuse for that. Thanks, Rose
Guest guest
I am a single guy and might be taking the lazy way about this but I find the cooking to be less time than before and no worrying about if the meat is cooked enough I microwave/steam all my veggies and what I don’t goes in the Crockpot or I will make in big batches and just reheat in the microwave. I also buy frozen veggies a lot and don’t go fancy on the recipes. I stick with the simple stuff so there is not a lot of prep time. Might not win any awards but quick and healthy. I too am doing this for my health. Next check up is 8/25 to compare new tests to my very bad old ones from 3 months ago.
