Guest guest Posted August 22, 2009 Report Share Posted August 22, 2009 I had some butternut squash that needed to be used up and I couldn't find a recipe that took my fancy. I was really happy with the result of my experiment. Christie Curried Butternut Squash and Apple Soup with Lemon 1 small onion, finely chopped 3 cloves of garlic, crushed 1/2 Tbsp sunflower oil 2 stalks of celery, finely sliced 1/2 butternut squash, peeled and diced 2 carrots, sliced 1 potato, peeled and diced 1 apple, cored and sliced 1 tsp balti spices/curry powder 1/2 tsp turmeric 1/2 tsp paprika 450 mls/3 cups vegetable stock juice of 1 lemon salt and pepper to taste Saute onion, garlic and celery for about 5 minutes until softened. Add spices, cook for 1 more minute and then add squash, carrot, potato, apple and vegetable stock. Cook for about 20 minutes until vegetables are soft.
