We are in our early 60's and have for some time been filtering out the meat. We have not eaten beef in over three years and chicken figured in our diet once per week. We have been meatless for three weeks. A plant based diet seems more in keeping with our present state of health and certainly makes sense after reading The China Study by T. Colin Campbell. Here is a recipe which I intend to change by substituting the ground beef with textured vegetable protein. There is a doughnut chain here in Canada called Tim Horton's and their chili is very nice. I tried to duplicate it at home and achieved success with ground beef. Now I will change it to add the TVP and hopefully it will be a good alternative. Billy's Chili 2 Cups Textured Vegetable Protein ( not sure if that will replace 500 gms of ground beef) 1 medium onion, diced 1 Green Pepper, diced 1 14 oz. can Red kidney beans ( drained) 1 14 oz. can Italian diced tomatoes 1 14 oz. can Beans in tomato sauce 1 level Tbsp chili powder 2 Tbsp white vinegar Ground opepper to taste Drain and rinse the kidney beans in cold water. (Next step as I see it ) in a small bowl add 2 cups of hot water to 2 cups of textured vegetable protein and let stand until water is absorbed.) Add all ingredients to a medium saucepan and stir well. Cover and simmer on low heat for (70) minutes stirring occasionally.
