The only thing I changed was to add about 1/2 tsp sugar to offset the acidity of the garden tomatoes I used. 2 tsp olive oil 1 C chopped onion 3 garlic cloves, crushed 2 14.5 cans no salt added whole tomatoes, undrained & chopped 2 16 oz. cans cannellini or other white beans, drained 1 14.5 oz can broth 1 Tbsp chopped fresh parsley 3/4 tsp dried oregano 1/4 tsp pepper 1/4? C grated parmeasan heat oil in large saucepan over medium heat. Add onion? garlic, saute 4 minutes or until tender. Add tomatoes and next 5 ngredients (tomatoes through pepper) and bring to a boil. Reduce heat, simmer 10 minutes. Ladle into bowls, sprinkle with cheese. We made it a meal with rustic bread and a salad. Amy Quote Link to comment Share on other sites More sharing options...
