Guest guest Posted April 21, 2009 Report Share Posted April 21, 2009 I just wanted to mention that blanching is not necessary for freezing tomatoes. You can put them directly (after washing) in a bag of your choice and freeze. When the tomato abundance hits, direct freezing saves a lot of time. When you thaw them, the skin will slip right off. I take the skins off as they start to thaw. All tomatoes that we tried (many) direct freeze very well.
