3 T oil

3 onions, chopped

1 T chilli powder

1 T ground cumin

¼ tsp cayenne

2 red peppers, chopped

1 T minced garlic

3 T cocoa powder

1 can undrained tomatoes, chopped (or tomato puree)

1 can kidney beans, drained and rinsed

1 can black beans, drained and rinsed

1 c. water

2 c. corn (canned)

½ c. bulgur, uncooked

S & P

 

In a heavy saucepan, heat oil over medium heat. Add onions, chilli powder,

cumin, cayenne; sauté for 5 minutes or until are tender. Add peppers and garlic;

sauté for 1 minute. Add cocoa, tomatoes, water; bring to a boil. Add beans,

corn, bulgur. Reduce heat to low and simmer, uncovered, for 15 minutes. Add S &

P. Serve with a dollop of sour cream and grated Cheddar.
