Guest guest Posted May 22, 2009 Report Share Posted May 22, 2009 1 medium onion, diced 1 tbsp. oil 3 cucumbers, peeled, diced 2 1/2 cups broth 1 1/2 tbsps. lemon juice 1 tsp. sugar 1 cup half-and-half or soy creamer salt and pepper dill to garnish Saute onion in hot oil 5 minutes over medium heat. Add cucumber and cook 5 minutes more. Add broth, lemon juice, and sugar. Boil. Reduce heat and cover and cook for 20 minutes. Cool for a few minutes. Puree in a blender.
