Zucchini a La Grecque

Amount Measure Ingredient -- Preparation Method

4 zucchini -- trimmed & scrubbed

1 tablespoon parsley -- finely chopped

1 tablespoon tarragon -- finely chopped (prefer fresh but may

substitute 1 tsp dried)

pinch of thyme

teaspoon salt

black pepper -- freshly ground

Dash of Tabasco sauce

1 bay leaf

1 tablespoon lemon juice

1 cup olive oil

1 clove garlic

1 cup water

 

Cut zucchini into slices 1/4 inch thick. Place with remaining ingredients

in a saucepan. Cover and bring to a boil. Reduce heat and simmer until

tender, but firm, 8 to 10 minutes.
