Eggplant frying trick

I need to try peanut oil. Mom never used it, probably because it was too

expensive. I've only seen great big huge containers of it at the grocery

store. I don't want a great big huge container. :( Oh well, may try it

anyway. I know it tastes better than veg oil! (and am I the only one who

can't stand the taste of vegetables cooked in olive oil? I'd take margarine

over olive oil...)

It is in smaller bottles. Look at the market. It will fry up the eggplant nice

and crispy, not oil laden.

I will, Donna, thanks for the tip.  Any reason for the peanut oil?  I'm an

olive oil diehard....hey, I married an Italian, what can I say.  LOL

  I love olive oil too.  If you fry potatoes, breaded zuccini, mushrooms,

okra and eggplant in the peanut oil, it is light and doesn't seem to absorb like

the other oils.  Less grease.  Give it a try, make sure to add a little

cornstarch to the flour, I also toss a spoonful of cornmeal into the mix.

I have heard peanut oil has a higher burning point?, thus will cook faster and

may make the food less greasy.
