(our 4 kids, daughter in love and 2 foster kids, all of them in their teens with their settings stuck on FEED MEEEEEEEEEE!) Hmmmm, but come to think of it, all of the kids came with lots of laundry. *shudder* Tonight's dinner - eggplant Parmesan, garlic toast and salad. Hint: roast lots of garlic then mash it up and store well covered in the fridge. VERY well covered or everything in the fridge will taste like garlic. You don't even need to peel the garlic, just squeeze individual cloves and they'll pop out of their skins. Use parsley or lemon juice to get the garlic smell off your hands. I like using it in my garlic bread/toast. The roasted garlic is sweeter and tastes wonderful done this way. If you're planning your garden, try planting some elephant garlic along with the regular kind. It is milder in flavor and somewhat sweet.
