My holistic doctor thinks it would be good for me to eat mostly a fruit and veggie diet. I hope to get and share some great recipes with you guys and connect with friends too. Here is a recipe I tried when I wanted to prepare butter squash in a different way. I think it taste great. I hope you enjoy as well. Garlicky Baked Butternut Squash Submitted by: Anita Bukowski Rated: 4 out of 5 by 149 members Prep Time: 10 Minutes Cook Time: 50 Minutes Ready In: 1 Hour Yields: 6 servings " The mild garlic flavor in this dish makes for a deliciously different treatment for butternut squash. --Anita Bukowski " INGREDIENTS: 2 tablespoons minced fresh parsley 2 tablespoons olive oil 2 garlic cloves, minced 1 teaspoon salt 1/2 teaspoon pepper 3 1/2 pounds butternut squash, peeled and cut into 1-inch cubes 1/3 cup grated Parmesan cheese DIRECTIONS: 1. In a large bowl, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat. 2. Transfer to an ungreased shallow 2-qt. baking dish.
