Guest guest Posted March 27, 2009 Report Share Posted March 27, 2009 Avocado with Citrus Salad with Nut Sprinkles 2 fresh ruby grapefruits 1 small or half a large jicama or 1 daikon radish cut into matchstick-size pieces. Juice of one small lime 2 ripe avocados sliced in thin wedges (tossed in some fresh lime juice to keep their color) washed young greens such as spinach, watercress or arugala 1/3 cup cole slaw dressing or a poppy seed honey mustard dressing, divided in half sliced almonds A sprinkle of chopped cilantro or parsley Trim the peel off the grapefruits so that no pith remains, thinly (about 1/4 inch) slice the whole peeled grapefruit perpendicular to the navel so the individual segments are all visible. The slices will look somewhat like wagon wheels. Toss the greens with half of the dressing. On a platter or individual plates, lay a thin bed of the greens, arrange grapefruit, avocado and jicama, and drizzle remaining dressing on top of salad.
