Guest guest Posted March 27, 2009 Report Share Posted March 27, 2009 Vegetarian Lasagna for 2 people 2 to 3 lasagna noodles 2 tsps. oil 1/2 cup zucchini, sliced 2 to 3 mushrooms, sliced 1/4 cup onions, chopped 1/2 cup tomato sauce 1/2 cup cottage cheese 1/2 cup cheddar cheese, shredded 1 tbsp. grated parmesan cheese Cook noodles following package directions. Drain and rinse in cold water to prevent sticking. Saute the vegetables in oil and set aside. Prepare the tomato sauce. Oil a 5 " square casserole. Cover the bottom with a thin layer of tomato sauce. Fit in a layer of noodle. Place in layers 1/2 each of the cottage cheese, the vegetables, the cheddar cheese, the tomato sauce. Repeat ending with the tomato sauce. Sprinkle with the parmesan cheese. Cover and bake at 325 degrees for 20 minutes. Uncover. Bake 10 minutes or until brown on top. Remove from oven and allow to stand for 10 minutes before serving. Serves 2.
