Why don't you just try one from the files, they should all be good.  I have

never made anything from the files I didn't like

It's a " fermented " soy product (don't let that scare you though!). It DOES have

flavor, not sure how to decribe it (nutty, mushroom).....try steaming it (15 -

20 mins) then add some to chili or a tomato sauce so you can taste it that way.

I like it sliced thin and fried to brown it, then added to dishes (crumbled in

chili, diced smaller and used in a stir fry etc).
