Guest guest Posted March 10, 2009 Report Share Posted March 10, 2009 Cabbage and Carrot Relish 3 cups scraped and chopped carrots 5 cups chopped sweet red and/or green peppers 4 cups chopped cabbage 2 cups chopped onions 3 1/2 cups white or cider vinegar 1 1/4 cups sugar 3 tbsps. salt 2 tbsps. celery seed 1 tbsp. mustard seed Mix all the vegetables together well. Boil the vinegar, sugar, salt, celery and mustard seed together for 2 or 3 minutes. Add the vegetables and bring to a boil. Cook for exactly one minute and pack into hot sterilized jars.
