Veggie Lentil Burgers

2 Cups lentils

3 cups water

1 1/2 cups bread crumbs

1/4 cup wheat germ (optional)

1 1/2 cups grated vegetables (any raw or cooked: carrots, cabbage, eggplant,

celery, mushrooms, etc./ or a combination provides more flavour)

1 large onion, chopped fine

Salt to taste

1/4 teaspoon ground cumin

1/2 teaspoon paprika

1 pinch of crushed chilies

1/2 teaspoon crushed oregano (optional)

2 Tablespoons oil

1/2 cup flour (or bit for for desired consistency)

Simmer lentils on low heat until cooked or soak lentils in 3 cups water

overnight and cook next day for 3/4 hour (about 1 1/2 hours cooking time

without soaking)/ Drain, keep the lentil juice. Mash lentils with potato

masher and mix in the wheat germ. Soak bread crumbs in the lentil stock and

add later to rest of ingredients. Saute onions with salt in oil, until

translucent. Add grated vegetables, spices (and the soaked bread crumbs).

Mix all ingredients with flour to make a consistent paste. Make the patties

like any other burger, coating with flour, so they are not sticky. Saute in

small amount of oil, or grill or bake.

Hi, I am still new to this, and a really bad cook (lack patience)! I'm

trying to find out if you can make your own burgers easily, and items like

" chicken " nuggets, which my kids love?

Thanks, Petra
