Vegetable Tagine #2

Amount Measure Ingredient -- Preparation Method

1 red onion -- finely sliced

2 cloves garlic -- sliced

2 teaspoons chilli paste or harissa paste

1/2 teaspoon ground cumin

2 carrots -- sliced

1 green pepper -- deseeded and sliced

1 red pepper -- deseeded and sliced

2 tomatoes -- cut into segments

6 ready to eat dried apricots -- sliced

1 can chick peas -- (300 g ) drained and rinsed

300 milliliters vegetable stock

1 tablespoon tomato puree

1 tablespoon fresh mint -- chopped

 

Warm the oil in a large saucepan and gently fry the onion until softened.

Add the cumin, garlic and chilli or Harissa paste and cook for a further

minute. Add the carrot, pepper, apricot, tomato puree and stock. Cove the

pan and simmer for 15 minutes. Add the tomato segments and the chick peas

and cook for a further 10 minutes. Just before serving stir in the fresh

mint. Serve with 3 tbsp of couscous and a mixed salad.
