Guest guest Posted August 7, 2009 Report Share Posted August 7, 2009 Because we eat so much Indian food I make my own Garam Masala spice mix that makes around 1 1/2 cup when ground up. 5 three inch pieces cinnamon stick 1 Cup whole cardamom pods, green ones being preferred 1/2 Cup whole cloves 1/2 Cup whole cumin seeds 1/4 Cup whole coriander seeds 1/2 Cup whole black peppercorns Preheat oven to 200*. Spread all items on a shallow oven proof pan. Roast on the bottom shelf of the oven for 30 minutes stirring 2-3 times during the 30 minutes. Do NOT let the spices brown. Remove after 30 minutes and let set one minute. Then break open the cardamom pods between your fingers or I lay them on a towel and gently but firmly use my rolling pin and roll over them so the pods break open. All the other spices I grind in an electric coffee grinder that I use just for making spice mixes.
