Guest guest
I don't know if anyone has already posted this recipe, but here it goes anyways. (p.s. it is a recipe that I found that I changed a little, so that vegetarians, like ourselves, can get more protein and you don't need to use as many ingredients. I'll post the site where I first saw this). Vegetarian Tortilla soup Ingredients 1 cup of freshly chopped bell pepper and onion mixed 2 cloves garlic, minced 3 tablespoons ground cumin 1 (28 ounce) can crushed tomatoes (blend them, to liquify them, it tastes better.) 4 (14 ounce) cans vegetable broth (I recommend Swanson Vegetarian broth, soooooooooo yummy!!!) Pepper for taste 1 (11 ounce) can whole kernel corn, or frozen 12 ounces tortilla chips 1 can of any type of beans (I would use Northern, White, Pinto)You decide. That is for 12 servings (Doesn't say serving size) All you need to do is to put all the stuff in the pan, and wait till you think the beans/ peppers are done. (And to cool it down at the end, you can put in the frozen corn) Here is the link:http://allrecipes.com/Recipe/Vegetarian-Tortilla-Soup/Detail.aspx
