Howdy!

 

My kids love to make Gimbop which are korean sushi rolls. Once you get the

basic concept you can use whatever vegetables you have on hand to fill the rolls

and it takes no time to assemble them at all. This recipe makes enough Gimbop

for a family of 4 so I would recommend halving it and storing the ingredients in

separate bowls so you can throw a few rolls together whenever you want to.

 

Gimbop Recipe

1 bunch spinach, steamed

2 carrots, cut in long thin strips

1 yellow pickled radish, cut in long thin strips

2 tablespoon vinegar

1 tablespoon sugar

1 Avocado cut into long thin strips

1 egg, fried like omelet and cut in long thin strips (can substitute tofu)

3 cups cooked rice

1 tablespoon sesame seeds

2 teaspoons sesame oil or water

1 package roasted seaweed sheets

 

Directions:

Stir fry the carrot with salt and pepper.

Mix the radish with vinegar and sugar.

Mix the cooked rice with the sesame seeds and a little sesame oil or water just

to make it damp.

Place one seaweed sheet on a bamboo sheet. Put rice on half of the sheet and

add 2 pieces of spinach, 1 carrot strip, 1 radish strip, 1 avocado strip, 1 egg

strip or tofu strip on top of rice. Roll in a log and squeeze tight.

Use some drops of water to stick the seaweed together to keep it rolled.

Place a little sesame oil or water in your hands and rub it on the seaweed roll.

Put a little sesame oil or water on knife to cut roll.

 

-We are traveling now, and made a batch before we left to take with us. We put

them in a storage bowl and have been popping them as we go. They are a great

alternative to airport food. Ours have leftover steamed asparagus, grated

carrot, pickled radish, egg, leftover sauteed onion and portabello mushrooms, of

course short grain rice with some pickled ginger (Thanks for that post guys!)

 

Once you get the hang of it, you will find combinations that work for you. My

son likes to make them with cukes, avocado, raw carrot, and whatever Bocca

Burger Patty happens to be in the freezer.

 

Use your imagination and have fun creating new and unique tastes.

Hummus Wraps are always one my favorite lunch time items.

 

Sometimes for a quick lunch a few pieces of fruit will satisfy you.

 

 

 

With the salads you are probably just in a rut.

 

There is a great book by Dr. N.W. Walker

The Vegetarian Guide to Diet & Salad

 

Do a search online you will be able to find the book for about $2 or if lucky

your library will have it.

 

 

 

In the back there is a guide to making many different salads so it will be like

a new experience everyday.

 

Actually I am on my third book by Dr Walker. The information always amazes me.

 

 

Another good book with lots of ideas is Vegan Lunchbox

 

With me it is about quickness and portability.

Hummus wraps are great......I spread the hummus all over the wrap and then fill

with lots of veggies. Different wraps, different varieties of hummus, different

veggies. Salad possibilities are endless.....different varieties of lettuce,

greens, different veggies, toppings. I'm partial to lots of greens.....I prefer

the funky mixes of greens....asian, herb, etc. topped with chopped cucumber and

some feta or parmesan cheese. Simple, but I could eat it every day with

different kinds of dressing. Spinach is a great base too.....I really like the

baby spinach. Pasta salad made with lots of veggies and some dressing....Italian

or ranch is good as well.
