Poha Jalfrejee Ingredients: for 5/20 min 2 cups poha (beaten rice), ¼ cup shelled peas, 1 medium sized potato, 1 medium sized onion, 2 bread slices, 1 capsicum, 1 carrot, 2 tbsp chopped cashew nuts, 2 tbsp roasted peanuts, 1 tsp red chilli, ½ tsp gram dal, ½ tsp black gram, ½ tsp turmeric, ¼ tsp mustard seeds, ¼ tsp garam masala, 1 finely chopped green chilli, 2 whole red chillies, 6-7 curry leaves, a few sprigs coriander leaves, to taste salt, lemon juice, oil Method: Cut onion, potato, carrot, capsicum into thin long strips and fry potato. Boil carrot and peas in salty water until they are tender and drain. Wash the beaten rice and drain. Heat one ladle of oil in a pan, crackle the mustard seeds, add black gram, gram dal and curry leaves. When it turns brown, add onion and fry. When the onion is tender, add turmeric, both red chillies, cashew nuts, peanuts and stir. Add bread (cut into small squares, soaked in water and squeezed), the fried potato, peas, carrots, capsicum, poha, green chilli and salt. Mix well.
