Guest guest Posted February 28, 2009 Report Share Posted February 28, 2009 Hello, Sounds like your husband's been exposed to the Caldwell Esselstyn/Dean Ornish non-fat vegetarian diets. To get the cholesterol down to below 150mg/dl as specified by those programs (to become " heart-attack proof " ) the operant factors are becoming a NON-FAT vegetarian, like the recipes outlined in their books or in cookbooks by Jennifer Raymond. General vegetarian recipes, liberally using ingredients like olive oil and full-fat soymilk may still not be following the Doctor's Rx closely enough. Don't worry, just start with breakfast and follow through the meals and dishes they outline. Your tastes do change, and you find your enjoyment of eating spreads into the diverse (and copious and virtually unlimited amounts) of fresh fruits and veggies. Myself I really get crazy over fresh tomatoes and strawberries. When I discovered a way to make good fat-free veggie yogurt, I felt better than Columbus(!). Time to eat some now!
