I do believe that most dried red pepper that is sold in the store is made from cayenne peppers. Relative to the industry I think (not 100% sure) that cayenne peppers and red peppers are synonymous. However I have read that a number of different types of peppers are called cayenne peppers and they do come in different lengths and heat ranges. I believe that red pepper can actually be made up of a number of different types of pepper. For instance on this page it seems that they offer mainly red cayenne chili pepper but offer a few different varieties that are not as hot. It depends upon its heritage, the soil, watering, sun and heat, etc. Environmental factors can alter the level of heat of a pepper. Stressing them usually makes them hotter. Anyway, I primarily use dried pepper from my own garden from habaneros. It is a bit hotter than the cayenne . . . .
