Guest guest Posted February 23, 2009 Report Share Posted February 23, 2009 hi all...winter mushrooms are found in the winter even here in springfield ohio,they are the same specie as the what japanese call enokitake,they look diferent in the wild because of the growing conditions,they have redish orange caps,white gills,and black stems,,they grow on wood when the temps get to the mid 30s or above,I found some last week...so any way here is my recipie: pickled winter mushrooms: what you need is a few good sized clumps of the mushrooms a pickling jar and pickling salt. step 1:clean the mushroom,use only the caps,the stems are like wood. step 2:boil picling salt with a cup of sugar and a cup of veniger step 3:put the mushrooms in a jar and pour the mixture in the jar let it cool down refrigerate and serve.
