Guest guest Posted July 1, 2009 Report Share Posted July 1, 2009 * Exported from MasterCook * Salad Nicoise Recipe By :Rose Elliot Serving Size : 0 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large lettuce 1 medium sized onion -- peeled 450 grams firm tomatoes -- (1 lb) 5 hardboiled eggs 450 grams cooked french beans -- (1 lb) 12 black olives 2 tablespoons chopped fresh parsley 2 tablespoons best quality olive oil 1 tablespoon red wine vinegar sea salt freshly ground black pepper Line a flat serving dish with the lettuce. Thinly slice the onion, quarter the tomatoes and eggs, cut the French beans into even sized lengths. Put the vegetables and eggs into a bowl and add the olives, parsley, oil, vinegar and a little salt and pepper. Mix gently so that everything gets coated with dressing and looks glossy and appetizing. Heap salad up on top of the lettuce and serve as soon as possible.
