Guest guest Posted July 1, 2009 Report Share Posted July 1, 2009 * Exported from MasterCook * Chick Pea And Vegetable Mayonnaise Recipe By :Rose Elliot Serving Size : 0 Preparation Time :0:00 Categories : First Courses Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 125 grams chickpeas -- (4 oz) soaked overnight in cold water, then rinsed and simmered in plenty of water until tender or 425g (15 oz) can, drained 350 grams each of cooked carrots and cooked cut green beans -- (12 oz) 400 grams canned artichoke hearts 150 milliliters natural yoghurt -- (5 fl oz) 125 grams fromage blanc or other low fat soft white cheese -- (4 oz) 2 large garlic cloves -- peeled and crushed 1 tablespoon mayonnaise 1 tablespoon wine vinegar sea salt freshly ground black pepper crisp lettuce and watercress chopped fresh parsley Drain the chick peas and put them into a large bowl with the carrots and beans. Drain and quarter the artichoke hearts and add them to the bowl. To make the dressing, put the yoghurt, fromage frais, garlic, mayonnaise and vinegar into a small bowl and mix well together until creamy. Season with salt and pepper. Pour the dressing over the vegetables and mix carefully until everything is well covered. Line a serving dish with lettuce and watercress, spoon the vegetable mixture on top and sprinkle with chopped parsley. An alternative, richer dressing can be made using 6 rounded tablespoons each of mayonnaise and natural yoghurt, instead of the yoghurt and fromage blanc. NOTES : I love this French salad, but with its creamy mayonnaise dressing it's too high in fat and calories to enjoy very often. So I've gradually evolved ways of reducing the calories. Even slimmer's can enjoy this latest version, yet I think you'll agree its still very luxurious tasting. It's lovely with warm wholemeal rolls. I must say I do love artichoke hearts, but if you don't approve of using canned ones, use 225g (8 oz) very fresh mushrooms, just washed and sliced, instead. Serves 4-6. Nutr.
