It is de-fatted soy flour, so the unflavored kind has no fat, no cholesterol, and is high in protein and fiber. School cafeterias use it (colored and seasoned) to stretch ground beef (because it's cheaper than meat) and someone told me that Taco Bell even uses it in their ground beef. It cooks fast and keeps for a long time uncooked. I flavor it with some vegetarian beef-style seasoning and taco seasoning and use it in tacos, throw it in soups, etc. I find it at a larger grocery store in the health food section, and Whole Foods carries the granules in their bulk section. Several people on this list buy it online, I think I can probably get it cheaper that way, I've been going through so much of it! I'm anxious to try " meat " balls and " meat " loaf using TVP.
