If you add a little cornstarch to the breading before you fry then it will

retain even less oil.

I, too, use peanut oil in a cast iron pot.  I leave the lid on while the oil is

heating - gets it nice and hot, then test it by dropping a tiny bit of whatever

I'm frying into the oil.  If it doesn't start bubbling up and frying immediately

I wait a bit longer.  There are thermometers you can buy if you do not have an

electric fryer.-

What an interesting tip that is about cornstarch. I never knew that. Thanks
