Salad ideas?

my brother makes this, I can make it too but I always love it when he does

it for me.

A nice lettuce mix

sliced red onion

slivered almonds

crumbled gorgonzola cheese

croutons

mandarin oranges

toss with poppyseed dressing

Oh! I just remembered, I have a recipe for Warm Black Bean Salad over

Spinach, it is sooooo good. I don't think I " ve posted it here. I'll look itup

when

I get home.

Audrey,

 I enjoy dried cranberries, nuts, my new favorite is those wasabi peas. Salad

doesn't have to be just veggies our family loves to make taco salad from TVP. I

would limit it if you are dieting since we use corn chips. Have fun.

I love salad.......Anything and everything can go in a salad. With all the

different greens you could eat a different salad every day. Baked / grilled /

fried Tofu is a nice addition, you can also toss in some of the veggie meat

substitutes.....the " chicken " or " steak " strips, even veggie burgers cut up into

pieces. Rice and other grains.....cold or warm....I love a spinach salad with

brown rice, veggies and a little cheese. Pretty much any vegetable.....raw or

cooked. The list is endless. Sweet potatoes.....I cook one in the microwave, let

it cool and then cut it into chunks. Any kind of nut or seed would work, fruit

is a nice addition as well.

What is the brand of the " steak " strips you use? I think I've seen

Morningstar Farms ones...

 

I love spinach, too! We usually make our salads at least 1/2 raw spinach. :)

I'm thinking for next week, taco salad with some corn chips, black beans,

salsa, sour cream, avocados, etc. Mom likes French dressing on her taco

salad, which I think is just plain weird, but... :)

I love any kind of beans, especially kidney beans or chick peas on salad, and I

love salads with lots of fresh vegetables on it.....and different kinds of

greens.....which my husband refers to as " weeds " .....so funny. I also like to

add pine nuts, dried cranberries, sliced almonds or walnuts. Sounds good to

me!

 

You are so lucky to have a mother to have dinner with once a week. I would

give most anything to be able to have dinner with my mother just one more time.

She died September 18th, 1984 at only 58 years of age. I was 36 years old.

She was my best friend and the smartest woman I think I ever knew.......and she

loved me and my children so. I wish I could have her back......and now my 21

year old granddaughter is with her. I wish I could have them both back.

Enjoy your mother while you can.....you never know when you may not have the

opportunity to eat dinner with her ever again. AND, don't forget to wear your

seatbelt for Brittany.

LETTUCE, BEETS AND FRESH FIGS SALAD

 

Recipe repost.

 

I made this with fresh figs and it is great. I plan on trying it soon

with thawed frozen figs (maybe marinated in balsamic and honey and

chopped smaller?). In any case, it is very good.

 

Lettuce leaves, enough for a large salad bowl.

 

Beet leaves (from one beet)

 

1 medium red beet, peeled and grated

 

4-5 fresh green figs, quartered (I used the large green type)

 

goat cheese 2 oz, crumbled

 

olive oil

 

salt

 

balsamic vinegar

 

lemon juice

 

honey to taste

 

freshly ground pepper

 

toasted walnuts

 

tony chachzarades (sp?) or creole spice mix

 

 

Wash and break lettuce and chop beet greens. Marinate grated beets in

balsamic and lemon juice adding a tsp tony schazarades creole

seasoning. Save marinating juice. Layer lettuce leaves on a plate

and top with chopped beet greens. Add salt and olive oil. Follow by

grated beets, and spread fresh figs around. Add honey to beet

marinade (it should be dark pink) and drizzle over figs. This makes a

beautiful pink spot over each fig. Sprinkle goat cheese and walnuts

around. Grind fresh pepper on top.

Carrot salad with shiso, maple and mustard

 

recipe repost - I love this one too!

 

2 cups grated fresh garden salads - or use a mandolin

4-6 lightly steamed fresh green beans - very thinly sliced

bunch green onions (green part of the onnion)

few shiso leaves (I used about 6 purple ones)

 

dressing:

zest of 1 meyers lemon

juice of 2 meyers lemons

2-3 tbsp chinese sweet mustard

2-3 tbsp maple syrup

 

option: thinly sliced fresh peppers hot or mild

 

Mix first 4 ingredients, mix dressing and pour on salad. Garnish with

optional peppers on top.

And, I'll eat salsa as a dressing on ANY type of salad.  We all have our quirks.

My new fav is...

black bean burger from morningstar

mixed field greens

salsa

sour cream

mix corn, beans, and red onion with a tbsp of salsa juice (the watery stuff in

the salsa jar) (I keep this in my fridge regularly, as we eat mexican inspired

meals 3-4 times a week)

sometimes I add a sprinkle of cheddar cheese.

I am getting hungry now! LOL

How I wish I could see Mother once again. Guess I'll just have to wait.

 

Anyway, this is a kind of odd salad Carl and I like.

 

Kidney Bean Salad

Can red kidney beans, drained

1 small stalk celery, minced finely

1 small onion, minced finely (or use a little onion powder or dehydrated onion)

1/4 cup sweet pickle relish (more or less - we like more)

2 hard boiled eggs, diced or grated

1/2 red, yellow or orange sweet pepper, diced finely)

Thousand Island Salad Dressing served on side

Mixed salad greens

Garnishes - (one, all or none), baby tomatoes, sunflower seed kernels, sprouts,

Fried onion rings (the canned things), finely minced jalapeno peppers

(sparingly!), thinly sliced cucumber.

 

Mix beans, celery, onion, pickle relish, diced sweet peppers, chopped egg

together and let chill several hours or overnight. of salad on top, topping with

your choices of garnishes.

 

To plate up, I put a bed of mixed salad greens (baby greens from Paul Newman -

awesome) on the plate, then a couple scoops of the bean mixture on top. Put

sliced cucumber around bean mixture. Top with your choice of garnishes. Serve

Thousand Island dressing in gravy boat or just pass the bottle.

 

Carl and I love this salad which pretty much has it all - protein, fiber,

veggies - serve with some fruit ambrosia and corn bread and you've got a good

dinner without much work.
